| .Rice is the basis of the Gambian diet. Generally, this is accompanied by beef, chicken or fish stew. Fish of all kinds – salted, smoked, boiled or simply mashed and made into balls – are used, in a variety of stews. Gambians love spicing up their stews using different kinds of seasonings. Sometimes fresh fish used can have seasoning made of herbs added to it. Be careful, most spices and particularly the red pepper are quite strong. For the cordon bleu, we propose recipes of the two of the main local dishes which are easy to cook and very delicious…mmm! Chicken Yassa (steamed chicken with onion stew and rice) and Domoda (peanut butter stew with rice). | |
